Coastal Masala Whole Spatchcocked Chicken

Coastal Masala Chickpea & Lents: The Beans · Blend: Coastal Masala Time: 25 min · Serves: 4 as a side, 2 as a main. Ingredients • 4 tsp Coastal Masala • 1 can chickpeas, drained and rinsed • 1 cup to 1 full can lentils (your call), rinsed • 1 can tomato purée (or crushed tomatoes) • 2 tbsp butter (or ghee) • 1 small onion, diced • 2 cups vegetable or chicken stock • Salt to taste Steps 1. Melt the butter in a pot over medium heat; soften the onion, about 4 minutes. 2. Stir in the Coastal Masala and let bloom 30 seconds, until fragrant. Do not brown! 3. Add the tomato purée, lentils, chickpeas, and stock. Bring to a slow simmer. 4. Simmer uncovered 15–18 minutes, stirring occasionally, until the lentils have broken down and the stew has your preferred consistency. Drizzle with thinned yogurt or spiced olive oil for additional flavor bomb. 5. Salt to taste; serve with rice or warm flatbread. Chef's note: Lentils vary in cook time by brand — if it's still thin at 18 minutes, keep simmering; it thickens fast in the last few minutes.
